Banana Oat Blender Pancakes

These pancakes will have you flipping out. 

I hate myself for making that joke, but, to be fair, these pancakes are pretty dang delicious.  

Pancakes that are GF and vegan have a reputation for being lifeless, rubbery excuses for the real deal. I think these decadent and hearty blender pancakes may begin to heal the cracks in your heart from years of previous disappointment. 

The best part about this recipe? You make it right in the blender! The second best part? If you don’t have a blender, you can still make these pancakes! 

The oat flour gives the pancakes a nutty, hearty flavor, the banana and maple syrup add the perfect sweetness. The oats and banana also make these pancakes more filling than some others which I am all about.  For those without a blender, see the notes below the recipe for instructions on how to makes these pancakes. 

For those with a blender, the recipes is super fast and easy because you make everything in the blender (no dirtying mixing bowls or spoons) and then just pour the batter right onto a hot pan or griddle. 


Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: Eight 5-inch pancakes, about 2 servings. 

Ingredients: 

  • 1 cup favorite non-dairy milk
  • 2 cups rolled oats (gluten free, if necessary)
  • 1 medium ripe banana
  • 2 tsp baking powder
  • ½   tsp baking soda
  • ½   tsp cinnamon
  • A sprinkle of salt
  • Your favorite toppings! 

Directions:

1. Add the rolled oats to your blender and blend until you have a fine flour (1-2 mins)

2. Toss  in everything else and blend until smooth.

3. Heat a pan or skillet.* Pour or scoop out approximately ¼  cup of batter. When the edges start to become solid and bubbles form, flip! Repeat for the remaining batter. Plate and tops with more banana, syrup or your favorite toppings! 

Tips and Tricks:  

*If you don’t own a non-stick pan or find that your pancakes are sticking, lightly oil the surface. I recommend using oils with mild flavors (using olive oil might leave your pancakes with an odd flavor). I'd recommend Earth Balance or coconut oil. I have a non-stick pan and made mine without any oil at all.

The cinnamon gives these pancakes a nice golden color and great flavor. Feel free to add even more spices like nutmeg or allspice! You can also cook fresh blueberries or banana slices into the pancakes. My favorite toppings are banana and maple syrup, but you can add jam, nut butters, or anything else that your heart desires. As Bob Ross once said, "This is your world, you're the creator."
