Soba Noodle Salad

Soba Noodle Salad

Soba noodles are one of my favorite go-to weeknight meals because they're super customizable and easy to make. Start to finish, this dish will take you less that 15 minutes.

This salty and savory soba noodle salad is delicious hot or cold, making it a great option for an on-the-go lunch or pot-luck style dish. This recipe will feed two hungry people, but it's easily doubled or tripled for a week's worth of meals.


Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 2+

Ingredients:

8 oz soba noodles
2 tbsp. sesame oil
2 medium carrots, cut into ribbons (I used a vegetable peeler for this)
½ large red bell pepper
⅓ cup diced green onions
Optional: Other fresh veggies  of choice

1 tbsp. lime juice
1 tbsp. agave
1 tbsp. soy sauce
1 tbsp. chopped roasted nuts (I like peanuts or cashews)
1 tbsp. sesame seeds
Salt and pepper to taste
Optional: Chili flakes

  1. Bring a medium pot of water to a boil. Cook soba noodles according to package directions (typically about 7-8 minutes).

2. While soba noodles are cooking, heat a sauté pan over medium heat and add sesame oil, carrots and bell pepper, cooking 2-3 minutes, stirring frequently. Add diced green onion and cook an additional one minute. (Remember to watch your soba noodles to prevent over cooking!). Remove veggies from heat.

3. Drain your cooked noodles and return to your empty pot. Add in cooked veggies and all remaining ingredients, stirring well to coat. Enjoy warm or chilled.
