Sweet Potato Breakfast Hash
I have always been a huge fan of savory breakfasts, but it can be challenging to make a tasty, plant-based breakfast that is hearty and filling. This sweet potato hash is a protein-rich breakfast and has tons of flavor and a dash of smokiness and spice.
So many of my favorite plant-based meals are "accidentally vegan," and this is a perfect example. It doesn't feel like you're eating a vegan breakfast -- it's just tasty food.

Ingredients:
1 tbsp. olive oil
2 large sweet potatoes, chopped
½ large yellow onion, chopped
½ jalapeño, deseeded, finely chopped
4 cloves garlic, minced
1 tsp onion powder
½ tsp garlic power
½ tsp salt
½tsp pepper
½ tsp smoked paprika (optional, for smoky flavor)
1 cup black beans, cooked drained and rinsed
Heat a large saucepan over medium heat. Add oil, sweet potatoes and onion. Cover and cook for 5 minutes, stirring occasionally. Add garlic, jalapeño and spices, cooking an additional 5 minutes, stirring often.
Add in black beans and cook, uncovered, for 5-8 minutes, or until sweet potatoes are tender and browned slightly. Serve warm.
