Almond Butter
The New York Times once reported that Barack Obama eats seven almonds each night. In the late hours of the evening, almonds are the snack of choice of the former leader of our nation. From this, we can only deduce that almond are a source of intelligence, humility, dad-jokes and an all-too-charming smiles.
Imagine what President Obama would be like if, instead of just seven, he ate ten almonds a day? Twenty? Who knows where the world would be. This almond butter recipe ensures that you can get your daily dose of this Obama-approved snack with ease.
My food processor is quite small, so I made this almond butter in two batches. If you have a full-size food processor, you should be able to do this in one batch. I recommend using a food processor to make nut butters, but if you only have access to a blender, that will work.
Spread your homemade almond butter over toast, eat it with a banana, or drizzle it over your morning oats. As with all things, just ask yourself WWOD? (What would Obama do?)

Servings: 12 (yields 24 tbsp., or 1.5 cups)
Ingredients:
- 3 cups roasted, unsalted almonds*
- Optional: Salt, cinnamon, maple, or other flavorings of choice!
Directions:
1. Add the roasted almonds to your food processor, blend the almonds, stopping every few minutes to scrape down the sides. Depending on your food processor or blender, this can take anywhere from 3-10 minutes.
2. You will see your almonds transform from whole nuts to a mealy mixture and then to a butter! During this process, a sort of ball may form in your food processor. Keep going – this means you're on the right track!
3. After your almond butter has formed, give it a taste! I like to add a teaspoon of salt to mine. For sweet nut butters, you can add a tablespoon of agave or maple syrup or even sprinkle with spices like cocoa and cinnamon.**
4. Transfer almond butter to a jar or airtight container and store in the refrigerator. I have found that my nut butters last quite a while this way – up to a month at least (I've always eaten it all before it got to that point).
Tips and Tricks:
*If you have raw almonds, just toss them on a baking sheet and roast them at 250°F for 10-15 minutes. Roasting or warming your almonds just before adding them to your food processor will actually speed up the nut-butter making process.
**Only add flavors after the you've made the butter, or it could affect the way the almonds form into a butter.
