Date and Almond Power Bites

Sometimes you just need a portable, filling, energy-packed snack but don't want to spend a small fortune on plant-based bars. That's where these almond and date power bites come into play. You can make these little guys right in your food processor with 5 ingredients in ten minutes. They're filling, sweet, nutty and absurdly delicious. They also double as a healthy dessert when you're craving something sweet.  

Medjool dates are some kind of magic. They're an awesome was to add sweetness to any recipe without using refined sugar, plus their soft, jammy texture makes them perfect for making perfectly chewy bites.  

Many people might call these "energy balls" or "snack balls" but I think I'd rather use the term power bite, for obvious reasons.

Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 20 bites

Ingredients:
1 cup medjool dates, pitted (160g) 
1 cup almonds or nut of choice (140g) 
½ cup shredded coconut, unsweetened (40g) 
½ cup oats (40g)
1 pinch salt

1. Remove the pits from your dates and add all ingredients to your food processor. Blend for 2-3 minutes, occasionally stopping to scrape down the sides. The mixture should have a little texture, but should stick together when pinched.**

2. Form the mixture into small bite-sized balls by rolling them in your hands. The mixture should yield around 20 cherry tomato-sized power bites. Store in an airtight container in the refrigerator for up to two weeks, or freeze for later use. 

Tips and Tricks: 

*If your dates are on the drier side, I'd recommend soaking them in hot water for an hour ahead of time to help them break down better in the food processor.

** If you notice that your mixture seems too dry or isn't being blended well by your food processor, add it hot water, 1 tbsp. at a time. It should come together with 1-2 tbsp. of water, depending on the softness of your dates.
