Super Green Pasta
Pasta is undisputed delicious, but it can be tough to find pasta recipes that are nutrient and protein-dense. This savory green pasta is packed with spinach, peas, zucchini and pesto so you can feel good about eating the whole pot of it.
Make this super green pasta as a warm and comforting weeknight meal or serve cold as a pasta salad at barbecues, picnics and potlucks.

Ingredients:
- 4 oz. pasta of choice (I used Pow! Green lentil pasta, because....green)
- ½ of a zucchini squash, diced
- 1 cup spinach (fresh or frozen)
- ½ cup peas (fresh or frozen)
- 1 tbsp. lemon juice
- ¼ cup vegan pesto (store bought or homemade)
- Salt and pepper, to taste
1. In a medium sauce pan, cook your pasta according to package directions. Drain the pasta and and set aside.
2. While the pasta cooks, add the diced zucchini to a small pan and cook over medium heat for 2-3 minutes. Add in the spinach and peas and cook for 4-5 minutes, until zucchini in browned slightly and the spinach and peas are wilted and cooked through. Add in pesto, lemon juice and salt and pepper.
3. Combine the pesto and veggie mixture with drained pasta, stirring to well coat. Serve hot or cold.
